Spicy Rice |
Ingredients

* Minute Rice (I usually do 4 servings, so 2 cups of rice)
* Salsa - your choice, we like medium heat
* Green Olives, chopped
* Cheddar Cheese

Directions

1. This is one of those "to taste" side dishes. So, the measurements I'm giving are approximate - and you can adjust to your family's choices.
2. Cook your rice according to package directions.
3. When rice is finished - transfer it to a microwave-safe casserole dish. Then, add 1 cup of salsa, and chopped green olives (we use about 1/2 cup or more) - cover with a blanket of cheese (about 1 cup).
4. Cook in the microwave for 2 minutes (until the cheese is melted.)
5. Serve - it's yummy!

This is a recipe that I developed to make my kids eat something, okay anything! It works. The cool part is that I can "hide" other vegetables in the mix without too much fussiness.
